Aviyal (vegetable curry) - one of my favourite vegetarian/vegan recipes. The nice thing about this dish is that you can use all your favourite vegetables. I used red peppers (capsicum), swede, carrots, potato, sweet potato, red onion and peas. All cooked in coconut milk. We went out for shopping on #Saturday. Met up with a friend and went to Thaliva Indian Kitchen in Park Ridge. It is a place we have been wanting to go to for a while after someone told us it some of the best South Indian in #Chicagoland. We got dosas and finished the day with a South Indian Filter Coffee. Worth a trip out on the Metra!
Finally got around to making the Paneer last night. Decided to make Paneer Khurchan. One of our favorite restaurants in Chicago (“Essence of India” in Lincoln Square) does it really well and we were craving it. It is not a dish you often see on a menu here in the US.
We wanted to make something good tonight so we made Gatte Ki Subzi together ❤️
