Japanese Coffee Jelly is a simple dessert made with strongly brewed black coffee, sugar and cream. It's easy to make and makes a refreshing treat in the summer, or whenever you need a pick-me-up!
~ It would be very nice to have an ongoing thread Here of varied comfort foods that we all could sample! Share Your faves with images and/or recipes. I love a good old fashioned Peanut Butter and Jelly sandwich on both regular bread and toasted. I never grow tired of them😋

Baking is my therapy, my passion, and my art. In the kitchen, I'm not just following recipes; I'm creating moments. Each measurement, each fold of batter, is an opportunity to infuse love and creativity into something delicious.
I started on Friday, soaking the wheat grains. Yesterday, I cooked the wheat grains to form Panno Cotto. It was left to set in the fridge overnight. (I have much more than I need right now)
Today, I started on the pie filling. Which in turn meant I had to make candied orange peel, and crema pasticcera (Italian Pastry Cream - essentially a thick custard).
I now have the filling and the pastry made, although the pastry has to rest in the fridge for an hour or so now.
After a long time - partner made some terrific chocolate pots de creme* (with some leftover yolks).
Kid2 really loves making quenelles so the whipped cream got a bit of treatment before going on top
I had some leftover ricotta cheesecake filling mix from the other day, and half a dozen tinned apricot halves in the fridge, and since we were in need of a little dessert, I made this.
It's a shortbread base, topped with a layer of cheesecake, and then drizzled with puréed apricot, and baked for approx 15 mins (shortbread was baked for 10 mins prior to topping).
It was, as, expected, delicious (and I have more for later).
Also, I totally winged it, so the above /is/ the recipe. (i.e. there were no measurements whatsoever).
