I struggled to find spelt bread recipes that weren’t boules (fun to make, but I personally don’t love making, eating or shaping boules)
Made a spelt flour pain de mie, which turned out excellent! Kind of just winged it with the King Arthur whole wheat pain de mie recipe, and it’s now something I’ll write up and make regularly

This is a bread I bake from time to time, the recipe is quite simple but it takes time because it's a cold fermentation, which means the dough needs to be left in the fridge for at least 12 hours.
Lots of us bake. For me, it’s a daily ritual: arrive home from the afternoon schoolrun, mix flour, yeast, water, salt and olive oil swiftly, let it sit warm for 2 or 3 hours, roll the baguettes and bake them for breakfast the next day. Costs me less time than getting to the bakery and back, and I always get the bread I want, varied in its flours, texture and taste. All it takes is planning and patience.

Took half an hour out of my morning to get some #bread started. Not sure when it will wrap up - this sort of timing usually ends up with a few loaves baked around supper time or shortly thereafter.
#sourdough is unpredictable though and this is a newer starter offshoot I've been cultivating for the last month.

Heute besteht der Teig aus hauptsächlich Tipo 0 und etwas w1050, r1150 und Weizenvollkorn. Gelockert durch meinen Roggensauerteig, weil ich vom Weizen zu wenig angesetzt hatte 🫣

For the first time after almost 6 months, the bakery in northern Gaza was able to open and bake bread for starving people there.
The amount of aid entering Gaza is barely enough to keep them alive, but Netanyahu and IDF seems to have eased the restrictions on incoming food trucks and a few of them actually reached the besieged northern Gaza.
I finally bowed to the bread gods and bought a seed heating mat to warm my sourdough starter and help my dough rise in my cold Northern California house. 😅
Is this ridiculous? Perhaps. Does it work? Yes, definitely. 🎉
@webanck I was using the microwave as a warming box. I heated up a glass of water and then closed everything in the microwave. Running the microwave would definitely be bad!
