Supper was super tonight. Spaghetti (of course) and air fryer crispy eggplant. More of the creations from the haul of produce I shared Saturday.

A whole lotta these made the base for my spaghetti sauce. Blanching and peeling took a long time. The pot began cooking a few hours ago and I just added in the pressure cooked carrots, celery, onion, green pepper, fresh basil and garlic. Another hour at a low simmer and then puree time. I freeze 2 cups at a time in ziplock bags flat. That way I can thaw the right amount quickly. Happy time.

The same tomatoes have been cooking down in a large pot for a couple hours. You can see a few whole tomatoes but they are blending down. No water was added. Just a pretty view by iPhone of the brilliant color.

Life Pro Tip: Wash your produce. Wash your fruit before eating. Wash your veggies.

I have been bingeing foodie videos on SM and I have been horrified with the not washing!

I just received a nice surprise. I pulled a few carrots for tonight's dinner, and this is what I found. I planted the Dragon carrot seeds two years ago. I suppose this explains why I had two separate mass-sproutings this winter! Either way, Yum!

Of the carrots I sowed last autumn for a March crop, only one has survived. However, it tasted superb, with a juicy, crunchy texture, much nicer than the store-bought, chemical-laden carrots.

I grow all my vegetables organically, without nasty chemicals.

In Dec of 2022 were placed at Jocko Point, waiting for the final set up. 4 structures, each about size of a trailer on a big rig. Inside, walls are lined with shelves. Tubes send water to the & special lights mimic sun above.

Harney’s original vision was to produce locally to strengthen within community, a model that could be implemented in other , esp up North, where fresh can be cost prohibitive.

Harvested the kangkung I was growing recently and realized that I cut off a shoot with flower buds. It is rare to find flowers on water spinach, so I rescued it and plopped the shoot into water. It has sprouted 😇

So pretty!

I harvested some more #spinach from our gardens today 😊

Spinach is one of a few food plants that I grow in #Saanich - year round. It's more difficult to manage in increasingly too hot temps in Summer & I have to harvest lots of leaves quickly in hot months to prevent too much bolting. In cooler months, they do much better.

There's a kind of satisfaction that you get from growing your own food. Yesterday, I harvested the water spinach from my back balcony and stir fried it. Amazing that all this food grew from seeds that barely fit a teaspoon.

As its almost spring I thought I would post again about sprouting kitchen waste ,instead of throwing stumps of lettuces, leeks ,celery ,swede cabbages, parsnips carrots etc on the compost heap ,if youleave slightly more of a stump than normal you can often sprout them and plant them ,its how I get most of my celery for flavourings and I use cabbages and swede for cut flowers .The big white flower below is from a carrot stump

"Truffles are fungi and their aroma forms a language for communicating with insects and animals they rely on for dispersal. Because they live underground, truffles need strong odors to permeate through the soils above. Those they pump out originate from hundreds of volatile organic compounds—or VOCs— which are a soup of ketones, alcohols, aldehydes and multiple other substances."
