For the curry, I normally use some sort of vegan meat substitute that’ll brown well to develop a good frond as a base. Just brown some vegan sausage; that’s a good step 0. If you don’t want to do that, I’d just add more minced onions and cook longer in step #1. This is where you get your depth of flavour.
That said, I don’t normally make the curry with the tofu katsu. So if you’re going with the katsu route, you really don’t need the 2nd protein of the vegan sausage. That’s why I recommend adding more onion for depth of flavour.
The S&B curry powder really doesn’t have a good substitute, so you’ll need to order it from wherever you can get it.
You can get off amazon, but if you’d like, I’d be happy to share the ingredient label, if you don’t want to support a PBC company, although that info is fairly easily accessible.

I made the best pot of #soup I’ve ever cooked today. I didn’t use a recipe, so I don’t have measurements for you—just keep tasting as you go. I started with a pot of chicken stock & added a couple of healthy splashes of low sodium soy sauce, a big spoonful of garlic chili sauce, a couple of big spoonfuls of minced ginger, about the same amount of minced garlic, black pepper, paprika, a little Basque seasoning (I put it in everything), Chinese 5-spice, some parsley, +
Chop the woody ends off the shoots.
Heat olive oil in large frying pan on medium heat.
Chuck in asparagus and a pinch of salt.
Close lid, sauté for about 5-7 minutes. Shake pan occasionally.
Sprinkle on about a tablespoon of sugar, continue sautéing for 3 minutes until sugar has caramelised.
Add a solid splash of balsamic vinegar, shake, continue cooking with the lid off until the vinegar has almost evaporated (1-2 minutes).
Serve.
Best gardening weather today, so we took care of the vegetables. We'll be cooking again from tomorrow on: Japanese Oyakodon, Italian pasta alla zozzona and Chinese black bean mushrooms. The one or the other #recipe soon.
Interesting, the alcohol content in the hard cider served at La Crêperie de Paris at Epcot is only 3%. Going to brew up a batch of some kind of hard cider here today, probably, and all the recipes seem to be double that. #alcohol#brewing#homebrew
