Seeking eggplant recipe ideas, as I have one limp eggplant in the fridge and 8 eggplants growing in hydroponics (which may produce a massive amount of eggplant).

So far my repertoire includes 2 dishes:

  1. Eggplant Parmesan (Italian)
  2. Eggplant in Garlic Sauce (Chinese)

(the family hates eggplant, except me, so we never eat it 🤔 )

I've made this so many times that I've lost count. It used to be my favorite thing to take to parties. It's a Julia Child/Simone Beck recipe from Mastering the Art of French Cooking, v.2. I wrote it up a long time ago & added glosses & pointers.

@ai6yr The hardest thing is making sure the eggplant is cooked enough.

Also, every once in a while, an eggplant will just have very little flavor. It's the only recipe I've ever seen by Julia Child where she recommends MSG if the flavor isn't quite as much as you think it should be.

It's also a nice recipe to turn into a garlic bomb. 😆

What I was really doing earlier was wondering about replacing a hammer I used to have in my kitchen. I now have a, um, "correct" tool, but there was something satisfying about using an actual hammer to, say, flatten cutlets. I was looking at weights of these:

@ai6yr That is also a, um, correct tool. :) I've dented my non-traditional rolling pin using it as the wrong tool. Now I have a bunch of All-Clad I could use, & one of those little -- hell, I don't even know its correct name. [looks at same frickin' site] Ah, it's a "meat pounder." Sounds gross. ;) I also think I'm not supposed to put it in the dishwasher, but I ain't supposed to do that with the All-Clad either. Hopefully I can put the hammer top-rack in the dishwasher. ¯_(ツ)_/¯

@ai6yr I'm what's known as a lazy mother fucker. ;) Also, standing over a sink washing dishes is guaranteed to set my back off eventually. It might be 5 minutes or 2 hours, but it will happen. So any time I can.um, dishwasher a tool without damaging it, I'm all for it.

Amazing Persian-style stuffed peppers. (Do not do 2 teaspoons of saffron! Just a pinch will do.)

I used Baharat spice blend instead of the combo they list — it’s essentially the same. Either will work.

I also used Michael Solomonov’s method of washing and soaking the rice, rather than cooking it beforehand.

I chose to soak the rice in 2L boiling water and I let it sit for 4 hours. With thicker bell pepper walls, I baked it for 75 minutes & it was perfect. #food https://jmoreliving.com/2019/02/13/persian-inspired-stuffed-peppers/

Ah, I must have been suffering from "sheep" photographer syndrome that year. It's silly to go around the world taking the same photos as everyone else, tossing that one! (Multnomah Falls... overphotographed!)
