I don’t think adb would let you remove it, unless you have root. But you can try it out in Android Studio’s Emulator, it essentially provides you with with an Android VM on your PC. You can access it straight from adb, and it doesn’t matter if you break something, as you can simply create a new virtual device.

You don’t need NetGuard. GrapheneOS has a built in, more reliable firewall. You can access it by going to the settings -> privacy -> permission manager and selecting Network. Also, you can’t use a VPN when using NetGuard, so I recommend dropping NetGuard and using a VPN, as well as the built-in firewall instead.
Check out Calyx VPN and Riseup VPN. They are run by voluntary, non-profit organizations. If you need maximum security, consider routing your traffic through Tor, using the Orbot app (it’s not in the main F-Droid repo, you need to add the Guardian Project repo). There’s also Windscribe VPN, but it has limited bandwidth.

But now some genius doesn’t read the fine print and hooks up 2 or 3 on the same circuit. There is no electrician that tells him that’s dangerous because it’s all self installed and he doesn’t know any better. And all of a sudden you are up to 26.5A and you got glowing, smoking wires in your walls…

Maybe try some more troubleshooting on GrapheneOS? Also, I’m sure that the folks in the GrapheneOS Matrix channel are ready to help you out. You should be able to get Android Auto to work somehow.
Regarding AFWall+, do you actually need it? GrapheneOS has a built-in firewall, doesn’t that work well enough for you? And can’t you use something like NextDNS instead of AdAway? Also, the Graphene folks might be able to help troubleshoot the AdAway problem.
If you are going to switch to another OS, I recommend DivestOS. It’s the only thing that even comes close to Graphene in terms of security. It’s based on LineageOS, but has some significant security improvements, and for example allows for bootloader relocking. It’s the only other OS recommended by the Graphene devs.
I wouldn’t recommend anything older than a Pixel 6, because the 5a will reach its EOL in August, and all the older devices already reached their EOL. Regarding the modem, I don’t know what you are talking about, I never had any issues on the 6a and the 7 Pro, and never heard about such issues. But feel free to explain this to me.
There might be an easier way to accomplish this. The RethinkDNS app has a built-in Firewall and WireGuard VPN client. It also allows you to configure per-app Wifi and cellular data separately. The only caveat is that you would need to manually import the WireGuard profiles from your VPN provider.
