So, i started this batch of miso back in December of 2020, about 9 months into the pandemic. Technically it was finished in December 2021, but i’ve read about aged misos that are 5+ years old, so i just decided to keep it rolling along. it’s now so salty rich and dark that it looks like baked brownies. #DIY#fermentation#Miso#japanesefood

The tofu cubes tasted a lot like spicy smoked cheese, really nice! Our son shunned the mentaiko since he found out what they are 😆 but my husband loves them.
We compared the two different rolled up omelettes and I think everyone preferred the sesame version but the dashi one was a lot juicier which was nice too.

“Itago-Kometen” (板五米店) is a restaurant and café in a restored 100-year-old building on the southern edge of Nakajuku Shopping Street in Itabashi, Tokyo. Having a day off today for some errands and doctors appointments, and went for lunch at “coffee and dining 自由自在” in our neighborhood. The owner is a very nice person who makes a delicious and balanced variety of dishes every day, and combines them into a satisfying and reasonably priced (¥1,200) lunch set. (Insider tip: her Tamagoyaki is the best I had in Tokyo). Also had an iced coffee.
Now on to more errands.🚶♀️
