Contacted Mrs. Meyers to find out % acetic acid in product that intrigued me: lemon verbena vinegar gel. I guess the CA Cleaning Products Right to Know Act does not include percentage. They told me it is proprietary info, lol. Under the part 3 composition section of the MSDS: in lieu of list “For additional information on product ingredients, see www.caldrea.com.” so I guess that is a sister company which does not have the info. #cleaning #vinegar #aceticacid

Saw something new today on the freeway. On both WB & EB approaches to Vacaville on I-80: there are now stay in your lane signs, curve signs, & ALL lanes are separated by a solid white line for a short distance. Not sure if this is temporary as a part of the managed lanes construction project or a permanent measure.

Seeking eggplant recipe ideas, as I have one limp eggplant in the fridge and 8 eggplants growing in hydroponics (which may produce a massive amount of eggplant).

So far my repertoire includes 2 dishes:

  1. Eggplant Parmesan (Italian)
  2. Eggplant in Garlic Sauce (Chinese)

(the family hates eggplant, except me, so we never eat it 🤔 )

deewani,
@deewani@mastodon.social avatar

@ai6yr What kind of eggplant? Globe, Japanese, Chinese? I oven roast globe eggplants to make Punjabi Baingan Bhartha (which I saw at Trader Joe’s but have not tried). Basically you add the mashed innards to a curried tomato sauce made from scratch and eat with roti/chapathi or naan. It’s kind of like baba ghanoush but not a cold dip. If interested I can write out a recipe.

deewani,
@deewani@mastodon.social avatar

For the slimmer eggplants I usually make a sliced eggplant/potato Punjabi dish for my parents or sometimes masala stuffed baby eggplants cooked in a similar base . I really only like eggplant in bhartha or Thai sliced basil eggplant over rice but I don’t cook that one. For the single eggplant you could just slice in rounds, rub with preferred spices (garlic salt, pepper, etc) and simply sauté in a pan until crispy/caramelized.

deewani,
@deewani@mastodon.social avatar

@ai6yr BAINGAN BHARTHA
Prick washed globe eggplants with fork so they don’t explode, wrap in foil, broil on high in oven until they are easily pierced by a fork & the skin is charred, can take 1 to 1 1/2 hours depending on size of eggplants and proximity to broiler. You can also roast them on a grill/bbq outdoors. After they are cooked let them cool off so they can be handled. I then cut the top off and slice each one in half, scooping out the cooked insides and removing the peel.

@deewani@mastodon.social avatar

You can use a masher or a knife to break up larger parts, or you can use a masher at the end of the cooking process once the eggplant is added to the tadka (masala sauce). Most Punjabi dishes start with the following base, with tweaks to amounts of ingredients based on what is being cooked. Many dishes like meat curries, palak/paneer, bhartha. etc taste better on the second day (or later in the day) as the meat or paneer or eggplant soaks up all the flavors.
For 4 large globe egg plants.

deewani,
@deewani@mastodon.social avatar

TADKA (masala sauce)
◦ 3 large or 4 medium red onions, slice in half and then slice lengthwise
◦ 1 or 2 green jalapenos, sliced in rounds or diced
◦ 10 to 15 cloves fresh garlic, peeled, minced
◦ 1 inch long fresh ginger piece, peeled, minced (many people omit this)
◦ 6 medium size vine ripe juicy tomatoes, chopped (campari are also a good choice)
◦ 1 bunch fresh cilantro, washed, de-stemmed
◦ 1 to 2 tbsp cooking oil or ghee
◦ 1 to 2 tsp cumin seeds
◦ 1 to 2 tsp salt

deewani,
@deewani@mastodon.social avatar

◦ 1 tsp ground turmeric
◦ 2 tbsp garam masala
◦ 2 1/2 tbsp ground coriander
◦ 1 - 2 tsp paprika/smoked paprika
◦ 1 tsp mango powder

deewani,
@deewani@mastodon.social avatar

Place in a mini food processor/chopper: garlic, ginger, jalapeños. Pulse until finely diced. And add to the prep plate of sliced onions.

In the same emptied processor (no need to rinse), chop/puree fresh cilantro (twist off the woody stems, wash the rest and squeeze out water), throw in mini processor and add tomato wedges to make a cilantro/tomato sauce.

deewani,
@deewani@mastodon.social avatar

Put a large pan on the stove on medium low heat, after it is warm a bit, add the oil or ghee, bring to medium heat and add cumin seeds which will start to splutter and brown.

deewani,
@deewani@mastodon.social avatar

Add above onion/garlic/ginger/jalapeno mix and the salt. (Salt will draw the water out from the onions, helping you brown/caramelize them faster and better). After browned, add the spices, stirring and cooking further a minute or two. Then add the pureed tomatoes + cilantro and cook until the mixture thickens, darkens and becomes more like a gravy. Then add the mashed eggplant and cook maybe 20 minutes further on low. If anyone has Qs I will answer later.

Got to troubleshoot tomorrow. First dad says he can’t turn TV ON (Siri remote). I turn it on via my iPhone’s Apple TV remote. I look at settings to see battery status but it shows remote not connected. So I plug Siri remote to charge. Was going to try to restart it & re-pair it after. I remind him of how to use his iPhone as remote. Then he keeps calling me that he can’t turn the TV OFF. Every time I turn it OFF with my phone it comes back ON by itself shortly after. Had to unplug it!

Kind of crazy to have two separate issues after zero issues for 3 years. Wonder if either an iOS update or an LG update broke HDMI-CEC. The LG is basically a monitor, no cable here. Or could the two issues be related? Hopefully I can figure it out.

I caught the start of a nest in my engine bay. They were using the insulation from the underside of the plastic engine cover and stuffing it between the intake runners and the top of the engine.

What are people using as rodent deterrents these days?

I wonder what is going on with the #BirdsArentReal insta account. They have changed their account profile to Birds Are Real and have recently posted “Hey all— we were just joking around. Birds are real, and their existence is one of the many miracles of our universe.”. I wonder if this has anything to do with the recent fear of #H5N1 ?

Hi all. I can't keep doing this. Birds are real. And they are beautiful. They are the closest thing we have to angels on this earth.
And I turned everybody against them, for what? A joke? It makes me sick.
I ask you all, today, to take a moment and appreciate the beauty of spring. Listen to the birds sing their song.
Let it fill your heart with the music of the universe.”

sigh I've got a faint positive test today. So either I got it from my wife and mother in law who both had it last week or I picked it up while traveling.

I'm not feeling very bad. Just congested.

This is the first time I've had COVID as far as I'm aware since the start of the pandemic.

deewani,
@deewani@mastodon.social avatar

@douglasvb I am really sorry you are experiencing this. It is so crazy how people have different experiences with it. I had it for the first time in early Feb. About a month later despite having mild respiratory symptoms, a nasty post-covid bronchitis set in that I am still dealing with. I hope you heal fast with minimal symptoms. Hot it from my parents. My 75 year old mom was asymptomatic.
