I struggled to find spelt bread recipes that weren’t boules (fun to make, but I personally don’t love making, eating or shaping boules)

Made a spelt flour pain de mie, which turned out excellent! Kind of just winged it with the King Arthur whole wheat pain de mie recipe, and it’s now something I’ll write up and make regularly

I owed @FlockOfCats a photo. This is how banana bread in the bread machine comes out. Not done and pale. So now I'm gonna bake it in the oven to finish it.

There’s a part of my soul that deeply needs Chinese bakery bread. My fave in the city is Yummy Bakery, my fave in east bay is Napoleon Super in Oakland Chinatown

They sell #bread like this at the local corner store. Turkish sourdough bread, they call it. It reminds me a bit of the best French bread. Doesn't quite reach up, but is miles ahead of what I can get at the nearest supermarket or bakery.

This is a bread I bake from time to time, the recipe is quite simple but it takes time because it's a cold fermentation, which means the dough needs to be left in the fridge for at least 12 hours.

I know Tomas @tf is baking ... anyone else?

Fougasse is kind of like French foccacia. Back in the days when wood-fired ovens were cutting-edge technology, fougasse was used as a sort of "test loaf" to make sure the oven was the right temperature for further baking.

Took half an hour out of my morning to get some #bread started. Not sure when it will wrap up - this sort of timing usually ends up with a few loaves baked around supper time or shortly thereafter.

#sourdough is unpredictable though and this is a newer starter offshoot I've been cultivating for the last month.

Seit die PV existiert konzentriert sich der Backtag auf die Mittagszeit ;-) Heute zwei Laibe meines Standard Mischbrotes, für das ich immer zusammenwerfe was gerade da ist und/oder weg muss. Heute besteht der Teig aus hauptsächlich Tipo 0 und etwas w1050, r1150 und Weizenvollkorn. Gelockert durch meinen Roggensauerteig, weil ich vom Weizen zu wenig angesetzt hatte 🫣
