Homemade black bean tortillas:

  • 8 oz whole wheat flour
  • 8 oz black bean flour
  • 2 oz tahini (black or brown)
  • 1 1/8 tsp salt
  • water

Not much to the recipe, honestly: Mix everything together with enough water to make standard flour tortilla dough (add water slowly as you mix - it may absorb less or more than all whole wheat tortillas) and cook as normal. Makes 8.

@wfpb @vegan @vegancooking @homemade The only downside is that these are less pliable than traditional tortillas due to the black bean flour. The pliability gets a bit better after the tortillas have cooled, but still not as good as 100% whole wheat tortillas. We use them as chapatis, so it's not an issue for us, but I wouldn't use this to e.g. make burritos.

Oh, and the cost per tortilla comes out to like 50¢ given where I get my wheat, black beans, and sesame seeds from (see below).

I get the black beans from the bulk bin at Sprouts, but could probably get it cheaper if I bought it online from somewhere like https://hummingbirdwholesale.com/products/bean-black-l106
