I also highly recommend roasted rutabagas, turnips, and, most of all, radishes. Those little red radishes that are ubiquitous here but somehow never actually used for anything are amazing roasted.

We use that to mix up our potatoes a bit.

@skinnylatte I got punched in the chest by a lady in Ohio for saying I didn't really like potatoes (not hard). She immediately apologized and I thought it was hilarious that it was her gut reaction to someone not really liking potatoes. Very stereotypical mid-westerner.

It sounds complicated but it’s really:

  1. Boil cut potatoes in water with salt and baking soda until you can poke it with a fork. Drain.
  2. Sauté garlic, rosemary and other herbs in oil or fat until they brown. Strain the solids, pouring the oil / fat on the parboiled potatoes
  3. Roast potato (that’s got the herb infused oil / fat at high heat. Turn midway)
  4. Place crispy potatoes in mixing bowl. Add the crispy garlic and rosemary and other herbs. Season.

@levlaz when you turn off the heat, drain the water and put the potatoes back in the hot pot, on the stove (without a flame). The residual heat will evaporate a fair amount of moisture. I also do this for potato salad

@skinnylatte I will copy that eventually, but I'll likely start my attempts with one (probably russet) until I'm happy with the results. I'm a terrible cook so I need practice!
