@teamsauerteig @brotbacken 200g starter (100% hydration, ½ rye flour, ½ emmer flour)
500g filtered water
100g sifted rye flour
600g strong bread flour
18g fine sea salt

Baked in lidded stoneware baking dishes, 475°F for 30 minutes, then uncovered at 425°F for a further 15 minutes.
