Harvested some of our Chinese chives & bean sprouts. Fried them up with lots of garlic & sprinkles of salt n pepper. It is simple, tasty & healthy. Cooks up in less than 5 minutes.

Boiling purple yams for evening snacks.
This is - when boiled. If baked/fried/roasted, GI goes up.

The average GI of yams are between 35-77 - lowest is from boiling them. Mom can eat one, with whipped butter & not have her blood sugars spike up.

Got these for my Mom (Type 2 diabetic).
I got some mango & plain kefir drinks(only mango one is pictured). The kefir drinks are good for me too.
Only steel cut oats for folks with - the other types aren't good for restricted diet.

for me, Mom & my youngest brother. It has red & green cabbages, spinach, 2 kinds of lettuces, cucumbers, Thai mint & lean boiled chicken. We pour nuoc cham sauce over & add chili sauce to individual taste.
