My English cucumber problem. Soooo I have about 20 of these, ripe/organic/wrapped. Need to know ideas on how to eat/cook/freeze. All I can think of are vague canapés and quiche. I also have a lot of bell peppers, onions, squash, green beans and grape tomatoes. Hmmmm.

@cobalt My Italian friend would slice them into thick planks and place them in a sealed container filled with white vinegar, salt and pepper, and usually a sprig of dill or tarragon laid in the vinegar. Just stick them in the fridge and they last a couple of weeks that way. Excellent for snacks or in salads. She did the same thing with cooked fava beans, vinegar, chopped onions, and parsley. So good!

@KatM Ok this idea sounds easy enough to try and I’ve seen 3 recipes here in. Moments that call for fresh dill. I’ll be off to the grocery soon. TY!

@cobalt PS Dill can be planted right now in most parts and grows "like a weed"....plus dried flower heads make your house smell delicious all year long....not much care unless it's arid where you live. I love dill also!
