I've been out here on the #westCoast for 18 years, and I have NEVER had #friedCatfish that was done right!
I don't understand why it's always SO BAD! It always tastes like a pool. They batter it with too much crunchy cornbread, and fry it too cold so its oily too.
I'm just gonna have to start a #foodTruck and show you yankees how #catfish is supposed to be cooked!
My theory is they are using the wrong kind of fish. The filets are always short and slimey, with a big ribbon of purple-brown fat. Back in #Arkansas we use #channelCats that are raised in a pond instead of a tank. The filets are cut lengthwise so they are thin. You just lightly coat in a fine corn meal, and get the oil SUPER HOT so it mostly drains off when you pull them out.
My great granddad had a pond behind his house and on summer mornings when me and my cousins were out of school he'd take us out there and call the fish up with a cowbell and throw them fish food and they'd swirl around eating it. We could just dip a bare hook in the water and pull them out with a cane pole they were so tame. He'd clean them and my great grandma would cook them with hushpuppies and pinto beans and coleslaw. They were white and fluffy and tasted like butter.
And I just can't have that anymore because I had to move to get broadband Internet and do my job.

You're ... not from the Ozarks at all are you? That all sounds pretty familiar, visiting great granddad and great granny and all them cousins around Lowell, Springdale and Tontitown.

@schizanon@jovikowi We're always glad to welcome you home. Parts of Bentonville have AT&T Fiber now if that would suffice. Naturally, it doesn't include my neighborhood despite being smack dab in the middle of the city. 🙄

My experience with the cowbell was Ma used to use it to call us home for dinner! Great 😼 so now I learn my childhood was more in tune with cows and catfish??? Now I'M OFFENDED!!
