Turn on my laptop. Terminal starts scrolling. Stereotypical #Linux hacker type stuff. My login screen is weird. My wallpaper is gone.

Plugged in the wrong USB stick into my laptop, the one with my Linux backup, and it just booted into it.

I'm interested in your Setup. So your Linux system is only functional with USB Stick? Can you give some Keywords? Are you using systemd-homed? The rest I can research.

No, I have a normal install. Root on my SSD, Home on the HDD. But I have "boot from USB" enabled in the BIOS ny default as I never use USBs that I don't know for security. I simply took the wrong USB from my drawer, my Linux install, and backup instead of the one I use for flashing firmware to printers.

So, when I turned my laptop back on, it booted to the USB. It just scared me as it had a scrolling screen of text in a terminal on startup, as Linux does when you break stuff.
