I've been baking bread. I have to admit, I am not a bread obsessed person (I grew up eating rice and noodles and bread is my no 3 carb of choice). But in learning to make breads I personally like that's changed my views on bread.

I do not like crusty, rustic, hard, dark, breads. I don't like them hard, or SF-style sourdough (super sour) either. I've decided that's okay. I'm exploring whole wheat breads in shapes and textures that I enjoy.

@skinnylatte but bread is definitely my #2 carb, after potatoes. I never learned to really care for rice or noodles, although the rest of my family loves them. They are fine. 🤷‍♂️

God I love the sensual aspects of making bread, though - the smell, the feel of the crust when it first comes out of the oven, the different textures and colors even on a well made loaf, the heat of the oven and bread contrasted with the ambient air. I can’t imagine replacing that in my life.

@skinnylatte I’ve been baking bread, too. It started as a means of making it for my kids’ lunch sandwiches - my mom made bread weekly when I was a kid, and I wanted some of that for my kids.

But I also find it is good for my feelings of failure and success: even bread that did not quite work is pretty good. And it’s nice to feel a bit worth something. And even better, I get lots of breaks as I work on it.

I’m just doing wheat bread for sandwiches at this point, plus pizza dough.

I also know a lot about Middle Eastern, Indian, Japanese, Chinese breads. I will travel to Fremont to get freshly baked Afghan breads, but I will not stand in line at a SF sourdough bakery.

What I really don't like is how in American foodie-ism, there's a One True Take on something. People think good coffee must be third wave, but there's plenty of great Vietnamese, Yemeni coffees. People think bread must be a certain way, but there are many bread-making styles. I'm here to celebrate Others.

@skinnylatte I hate to ask but.. what is third wave coffee? Also, fuck "one true way" in every form of food. "Different and differently good" forever

@coldclimate flat whites or pourovers made from single origin coffees made by a hipster with a man bun in a coffeeshop that looks exactly the same no matter where you are in the world.

i think it was useful in the past when it was 'coffee can be good!' but then it got super self-involved and image-based instead and now we just get super acidic and sour coffees that are trying to be cool

i love going to bakeries here where the bakers speak languages i don't speak. recently i went to a Salvadoran bakery, tried to order something, and i instead got a pork chop and cheese sandwich. (thankfully i am omnivorous)

seeking out adventure and food are, in my mind, one and the same. i can't have one without the other. if i go to a place and no one speaks any language i speak and i've never seen the food, i am especially interested in eating everything.
