I've seen ready-made mixes from the grocery, if you couldn't find some near you.
Or maybe from scratch? Traditionally, made from galapong (glutinous rice flour), but I'm not sure whether the typical rice flour you can find in grocery stores are made from glutinous rice, or regular.

Is there really a flavor, or just the scent of toasted banana leaves?
I dunno about you folks, but that comment just reminded me of our old yaya. When we were kids, my yaya used to put (folded) banana leaves under the flat iron, when ironing clothes.
Either there's bibingka, or she's doing house chores. 🙃
