On a device running iOS 17 or iPadOS 17, go to Settings, Developer, and scroll down to AirPods Testing- Pre-Release Beta Firmware. In there you can select a device to get the beta firmware.

Edit: I should say: Once you install beta firmware, you cannot downgrade to the previous version. It's a one way thing.

Looks like I don't have the 'Developer' menu on my phone. And I'd have to install the Xcode Beta on my laptop to enable it.
