For the City Watch stories, I'm kinda biased as it was my first Discworld book, but I'm gonna go with Feet of Clay.
The interactions between the Watch characters are all great, probably the best ensemble cast in Discworld, and Cheery's character arc is so satisfying. It also asks important questions about what it means to be alive and have your own autonomy, which will become important if we ever do develop sentient AI. #discworld
For the Witches stories, it's tough but I'm gonna go with Lords and Ladies.
The first appearance of probably Pratchett's most vile villains is memorable, and stuffed with great character moments, especially for Magrat and Granny Weatherwax. This story really hammers home the value of empathy, and the monsters created from a lack of it.
An absolute delight of a seasonal tale, where Susan really hits her stride, but the scene with the Little Match Girl is what lifts this above the other Death stories for me. It shows just how far Death has come over the course of the series; he's no longer the same figure who seemed to spend all his time obsessing over Rincewind's blind luck, and the fun the story has riffing on Christmas convention seals it. #discworld
